 3 pickles of raw mangoes



Raw mango pickle is loved by everyone. Now is the right time to pickle mangoes. Raw mangoes will be available in the market in just a few days. So make some pickles of raw mangoes, which you can eat throughout the year.

1) Sour-sweet-sweet mango pickle

Ingredients:

  1. Raw mango 1 kg
  2. Half a cup of vinegar
  3. One cup of mustard oil
  4. Two teaspoons of garlic paste
  5.  Two teaspoons of ginger
  6. Two teaspoons of turmeric powder
  7. Three tablespoons of sugar
  8. Salt in moderation.

For masala: fenugreek powder one teaspoon, cumin powder two teaspoons, fennel powder one teaspoon, randhuni powder two teaspoons, mustard three tablespoons, dry chili powder two tablespoons, black cumin powder one teaspoon. spoon


Method: 

Step 1: 

Cut the raw mango with the peel and rub it with salt and keep it overnight. 


Step 2: 

Next day, wash it, apply ginger, turmeric, and garlic and keep it in the sun for a while. Then add half a cup of oil to the saucepan and keep stirring the mangoes, when it melts, remove it. 

Step 3: 

In another saucepan, melt the sugar with the remaining oil. When the sugar melts on low heat, mash the mangoes with all the spices (except fennel, and fenugreek powder). When the mangoes are melted, add fennel powder and fenugreek powder.


2) Mango-garlic pickle


Ingredients:

  1. Two cups of unpeeled raw mango pieces
  2. One cup of mustard oil
  3. A cup of minced garlic
  4. A tablespoon of fenugreek
  5. Fennel is one tablespoon
  6. A tablespoon of cumin
  7. Two teaspoons of black cumin
  8. Half a cup of vinegar
  9. Two teaspoons of turmeric powder
  10. 10-12 dry chilies
  11. Two tablespoons of sugar
  12. Salt in moderation.


Method: 

Step 1:

Put salt on the mango pieces and keep them overnight. 


Step 2:

The next day should be washed and put in the sun for a few hours. 


Step 3: 

All the spices in the recipe should be finely ground. Then put oil in a saucepan on the stove. When the oil is hot, stir it with garlic for a while, then stir it with the batter masala. Then stir with mango. If the mangoes are soft after cooking for a while, stir in the sugar. 


Step 4: 

After that, when the pickle is cold, fill it in a bottle and cover it with oil up to the mouth of the bottle. Then put it in the sun for a few days.


3) Mango-onion pickle


Ingredients:

  1. One cup of raw mango juice
  2. One cup of chopped onion
  3. Two teaspoons of cumin powder
  4. Black cumin powder half teaspoon
  5. One tablespoon of mustard
  6. Chilli powder two teaspoons
  7. Mustard oil half a cup
  8. Like the amount of salt.


Method: 

Step 1:

Mango pulp and onion pods should be soaked separately in the sun for a day. 


Step 2:

The next day with all the remaining ingredients, knead it well by hand and put it in a bottle, and put it in the sun for a few days.
